Crusty Italian Sausage Bites Easy Cooking for Today
Volume II* by Pol Martin
(Brimar Publishing Inc.)

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 garlic clove, smashed and chopped
  • 3/4 pound Italian sausage, sliced (375 g)
  • 14 ounce can tomato sauce (400 ml)
  • 1 French baguette, sliced thick and toasted
  • 1 cup grated Gruyere cheese (250 ml)
  • salt and pepper
  • few drops Pickapeppa sauce

Heat oil in skillet over medium heat. Add onion and garlic; cook 4 minutes. Add sausage slices, season well and continue cooking 7 to 8 minutes.

Pour in tomato sauce, correct seasoning and cook another 6 to 8 minutes.

Transfer contents to food processor and blend. Spread mixture over slices of toasted bread and place on ovenproof platter. Top with cheese, sprinkle with Pickapeppa sauce and broil in oven until bubbly and lightly browned.

Serve at once. Makes 4 servings

Make Ahead Tip: Prepare up until the point of spreading mixture over slices of bread, cover and refrigerate. When ready to serve, toast bread slices and spread with mixture and continue with recipe.

Chili con Queso
Cooking with Crisco Oil
(Beekman House)

  • 2 tablespoons Crisco Oil
  • 1/4 cup minced onion
  • 1 7-1/2 ounce can whole tomatoes, drained and finely chopped
  • 1/4 ounce can chopped green chilies, undrained
  • 1/4 teaspoon salt
  • 2 cups shredded cheddar or monterey jack cheese
  • 1/3 cup whipping cream tortilla chips

Heat oil in 1-quart saucepan. Add onion. Cook over medium-high heat, stirring occasionally, until onion is tender. Add tomatoes, chilies and salt. Stir to blend and break apart tomatoes. Heat to boiling. Reduce heat to medium-low. Cook, stirring occasionally, 15 minutes. Remove from heat. Stir in cheese and cream. Cook over low heat, stirring constantly, until cheese melts. Serve with tortilla chips.

For a spicier dip, substitute jalapeno peppers (drained) for green chilies. Makes 1-3/4 cups

Make Ahead Tip: Make dip and refrigerate. When ready to serve, re-heat adding more cream, if necessary, to reach desired consistency.
